Fig Salad
There are many variations of a fig salad. You can't realy go wrong
if you use delicious, ripe, fresh, sweet figs.
One of my favourite combinations is
Fresh red or yellow figs 5 figs quatered or thinner
finely grated orange zest of one orange
toasted almonds roughly sliced 100gms
good quality goats curd,one of my favourites is Udder Delights about 100gms
you can use goats fetta if preferred
dried cranberries 100gms
fresh rocket or baby spinache or both a generous double handfull and more if you like
DRESSING
olive oil,juice of one fresh orange,lemon juice salt and pepper,table spoon of vincotto
DIRECTIONS
sprinkle all the green salad mix onto a generous sized platter
gently drop your figs and curd onto the salad mix evenly placed then add almonds,orange zest and cranberries.
Sprikle the dressing over the top.
I prefer not to toss this salad because it looks so lovely and presents well without been tossed.

Bazil,corriander,pistaccionuts,prociuto,cos or mixed lettuce,pecorino
