Fig Salad
There are many variations of a fig salad so you can't realy go wrong.
use our delicious fresh sweet figs preferably a combination of Archipal and Spanish Desert although any combination will do.
Choose 5 figs, cut them into quarters or thinner, add finely grated orange zest of one orange and 100gms of toasted almonds roughly sliced.
To balance the saltiness of the sweet fig add good quality goats curd, one of my favourites is Udder Delights about 100gms will do.
100gms of dried cranberries
Fresh rocket or baby spinache or both, a generous double handfull or more if you like
DRESSING
olive oil, juice of one fresh orange, lemon juice salt and pepper, table spoon of fig vincotto
DIRECTIONS
sprinkle all the green salad mix onto a generous sized platter
gently drop your figs and curd onto the salad mix evenly placed then add the almonds, orange zest and cranberries.
Sprikle the dressing over the top.
I prefer not to toss this salad because it looks so lovely and presents well as is.

Basil,coriander,pistachio nuts,prosciutto,cos or mixed lettuce and pecorino
